Ingredients
This is my take on the classic Spanish dish.
For the potatoes
1) 6 white potatoes, cubed.
2) Spray oil if you have, if not vegetable oil will do.
3) 1 tsp of dried parsley.
4) Half a tsp each of paprika, onion powder and garlic powder.
5) Salt and pepper to taste.
For the sauce
1) 500ml jar or carton of passata.
2) 1 tbsp ketchup.
3) Half a tsp each of garlic powder, onion powder, paprika and a dash of mild chilli powder.
Recipe
1) Firstly, pre heat your oven to 190° fan/ 375° fahrenheit. Cube your potatoes, leaving the skin on, into small cubes and place them in a baking tray.
2) Next add in the dried parsely, paprika, onion powder, garlic powder, salt, pepper and a couple of squirts of your spray oil or roughly 1 tbsp of vegetable oil and mix well to coat all of the potatoes.
3) Place in the oven for around 40 minutes, the potaoes should be nice and crispy and soft on the inside. If they are getting done too quick, turn the oven down.
4) When the potatoes are roughly 10 minutes away from the finish time, start making the sauce. Add your passata to a large saucepan and add in the other ingredients listed above. Stir with a wooden spoon and heat on a low heat for around 10 minutes.
5) Finally take the potatoes from the oven and add the sauce. Mix gently to combine and serve straight from the oven.
I also added in a pepper and onion to my sauce mix, so you can definitely be creative with this recipe.
